Easy & healthy homemade Cucumber and Feta Cheese Salad. Use fresh garden cucumbers, tangy feta, avocado oil, and red wine vinegar.
Ingredients
2 large cucumbers, peeled and sliced
½ cup feta cheese, crumbled
¼ cup red onion, thinly sliced
2 tablespoons dried or fresh dill, chopped
¼ cup avocado oil
1-2 tablespoons lemon juice
1 tablespoon red wine vinegar
Salt and pepper to taste
Instructions
1. Combine the cucumber slices or quarters, crumbled feta cheese, red onion, and chopped dill in a large bowl.
2. Whisk the avocado oil, lemon juice, red wine vinegar, salt, and pepper in a small bowl.
