There is satisfaction in transforming our bountiful 50-pound strawberry harvest from our homestead garden into strawberry jam for the year and homemade strawberry fruit roll-ups, or, as some call it, fruit leather. It's a delicious way to make the most of your homegrown produce.

There is nothing like enjoying the fresh taste of summer during the cold winter months. One of the kids' favorites is these strawberry fruit roll-ups, made with two ingredients. With just two ingredients and this simple recipe, you can enjoy them, too.

  • Fresh Strawberries: You ensure maximum flavor and nutrition by harvesting strawberries at their peak. Their natural sweetness and vibrant flavor make these fruit roll-ups irresistible. Homemade Strawberry Fruit Roll-Up Recipe

Ingredients
  

  • 4 cups fresh strawberries hulled
  • ¼ cup honey or granulated sugar adjust to taste

Instructions
 

Dehydrator Directions:

  • Puree the strawberries and honey (or sugar) in a blender or food processor until smooth.
  • Pour the strawberry puree onto a silicone dehydrator sheet or parchment paper, spreading it evenly to about ⅛-inch thickness.
  • Place the trays in the dehydrator and set it to 135°F (57°C). Dehydrate for 6-8 hours, or until the fruit leather is no longer sticky to the touch and peels away easily from the sheet.
  • Allow the fruit leather to cool completely. Cut it into strips and roll each strip up on parchment paper.
  • Store in an airtight container or plastic bag.

Directions for Oven:

  • Preheat the oven to 170°F (75°C) or the oven's lowest setting.
  • Puree the strawberries and honey (or sugar) in a blender or food processor until smooth.
  • Line a baking sheet with a silicone baking mat or parchment paper. Pour the strawberry puree onto the sheet, spreading it evenly to about ⅛-inch thickness.
  • Place the baking sheet in the oven and bake for 3-4 hours until the fruit leather is no longer sticky to the touch and peels away easily from the sheet.
  • Allow the fruit leather to cool completely. Cut it into strips and roll each strip up on parchment paper.
  • Store in an airtight container or plastic bag.

Notes

Sweetness: Adjust the amount of honey or sugar based on the sweetness of your strawberries and your personal preference.
Thickness: Ensure the puree is spread evenly to avoid uneven drying.
Storage: Store fruit roll-ups in an airtight container at room temperature for up to 2 weeks. For longer storage, please place them in the refrigerator for up to 1 month or freeze for up to 6 months.
Variations: For different flavors, experiment with adding other fruits, such as raspberries, blueberries, or bananas.
