Pains au Lait, or Petit Pains au Lait, translates as milk bread in French
Taste That Is the Talk of The table:
Creating homemade milk bread (Pains au Lait) is surprisingly simple, thanks to pantry staples like flour, yeast, salt, sugar, eggs, butter, and water. When these ingredients come together, they form a dough that's easy to work with—a golden crust and buttery center. The aroma that fills your kitchen as it bakes is a testament to the deliciousness that awaits.
One of the joys of milk bread (Pains au Lait) is its versatility. It's not just a sidekick to meals; it's a star in its own right.
How to Serve Milk Bread:
- Indulgent French toast is perfect for lazy weekend breakfasts.
- It is a companion to soups, stews, and salads.
- Swap out dinner rolls with slices of warm farmhouse bread.
The richness of creamy butter paired with the bread's subtle sweetness creates an irresistible flavor profile.
How Milk Enhances the Bread Taste and Sturcture:
- Moisture, Tenderness, Flavor: Milk adds moisture to the dough, resulting in softer and more tender bread—the fat content, whether whole milk or heavy cream, can contribute to a richer texture. Milk adds sweetness and richness to the bread's taste, making it a noticeable ingredient in sweeter bread varieties like milk bread or brioche.
- Improved Crust: The sugars and proteins in milk contribute to a beautifully golden crust when the bread is baking. This crust tends to be softer than crusts made without milk. The presence of milk enhances the browning and adds depth of flavor, leading to a more appetizing color in the finished bread. If you like that golden loaf look, this is how to achieve it!
- Texture and Structure: The proteins in milk, such as casein and whey, contribute to the bread's structure by forming a gluten network that traps air bubbles during proofing and baking. This results in a lighter, more airy texture.
- Extended Freshness: Bread made with milk tends to stay fresher longer due to its moisture-retention properties. This gives it a longer shelf life than bread made with water alone.
- Nutritional Boost: Incorporating milk into your bread enhances its taste and texture while boosting its nutritional value with essential nutrients like calcium, protein, and vitamins. Making homemade bread is a healthier choice to make for your family.
Butter- Butter adds a rich, creamy flavor to bread. This distinctive flavor complements various bread types, from basic sandwich bread to artisan loaves. Tender crumb? It helps create a finer texture in the bread, making each bite melt in your mouth delicious. When melted and incorporated into the dough, butter infuses the entire bread with its rich flavor, ensuring every bite is flavorful and enjoyable.
Sugar- adds sweetness to the bread, balancing out the flavors of the other ingredients. It also contributes to the overall aroma of the bread as it caramelizes during baking, enhancing its taste appeal. Sugar is particularly beneficial in sweet breads like Pains au Lait cinnamon rolls and brioche.
Bread flour has a higher protein content, around 11.5-14%, compared to all-purpose flour, which has about 10-12% protein—this higher protein content in bread flour results in more robust gluten formation. Gluten is essential for providing structure and elasticity to the bread, allowing it to rise correctly and achieve a light, airy texture.
When you are using bread flour in homemade bread, it results in loaves with superior texture, rise, and structure, making it a preferred choice for achieving professional-quality bread at home.

Indulge in its buttery sweetness and versatile flavor, ideal for family feasts and cherished gatherings. Homemade Milk Bread - a golden loaf perfect for French toast or as a dinner roll replacement.
Ingredients
- 6 cups bread flour
- 1 cup warm milk or heavy cream (100℉)
- 1 cup warm water (105℉)
- 2 ¼ tsp active dry yeast
- ¼ cup unsalted butter (room temp)
- ¼ cup granulated sugar
- 2 eggs (room temp)
- 1 ½ tsp sea salt (you can use your choice of salt)
Instructions
- Add the yeast to a bowl of warm water at least (108° F/42°C) and let it create a raft during blooming. While your yeast is blooming, add to a mixing bowl or (kitchen aid with a dough hook) Three cups flour*, sugar, butter, and salt.
- Once the yeast has bloomed and created a raft, add to dry ingredients (in mixing bowl) along with warm milk and eggs. Mix until the dough forms a dough ball. *Then, add the rest of the flour until incorporated gradually.
- Once the flour is fully incorporated into wet ingredients and the dough has pulled away from the edges of the bowl. Add the dough ball to an oiled bowl with plastic wrap and let rise in a warm spot for at least 1 hour or until doubled in size.
- Once the dough has had its rise period and doubled in size, preheat the oven to 375°(190°C), grease the bread pan, and set it to the side. Punch down the dough and flip the dough onto a lightly floured surface. Form a loaf log and tuck the dough under, creating a seam on the bottom. Make sure to well flour all sides of the loaf and add to the oiled bread pan bottom. Place a towel over them and keep them in a warm spot to rest for 15 minutes.
- Bake for 25 +/- mins, depending on the stove, until golden brown. (It will feel hard once done baking and soften as it cools.) Let cool in pans and release. Once cool, cut and enjoy!
