this Recipe

Strawberry season is upon us on the homestead, and one of our favorite ways to enjoy this juicy, sweet fruit is by making strawberry shortcake from scratch. This classic dessert features a crumbly, sweet, scone-like texture layered with delicious fresh whipped cream and strawberries. I even make them in jars for the kids to have a grab-and-go dessert on busy nights.

A Sweet Taste That Captures Summer

Homemade strawberry shortcake captures the taste of summer with every bite. The combination of tender, buttery shortcake, luscious whipped cream, and fresh, juicy strawberries is a match made in heaven. The flavors blend to create a dessert that’s not too sweet, perfectly balanced, and incredibly satisfying.

Why These Ingredients?

  • Fresh Whipped Cream: Fresh whipped cream, a key element of strawberry shortcake, is not just about its light, airy texture that complements the dense shortcake. It's about the control and customization it offers. Whipping cream from scratch allows you to adjust the sweetness and achieve the perfect consistency, giving you the power to create a dessert that's uniquely yours. The richness of fresh whipped cream elevates the overall dessert, adding a luxurious, creamy layer.
  • Heavy Cream for Dough: Heavy cream in the shortcake dough is a decadent touch that creates a rich, tender crumb essential for this dessert. The high-fat content in heavy cream adds moisture and flavor, resulting in a shortcake that's both light and crumbly. This texture is crucial for soaking strawberries with juice and whipped cream, making each bite moist and flavorful. Prepare to indulge in a dessert that's a true treat for your taste buds.
  • Fresh Strawberries: The star of this dessert, fresh strawberries, offer a burst of natural sweetness and vibrant color. When in season, strawberries are at their peak flavor, juicy and fragrant, connecting you to the rhythm of nature. Using fresh strawberries ensures that your shortcake has the best possible taste and texture, with each bite bursting with the taste of summer.

Easy to Make and Perfect Grab and Go Dessert

One of the best things about homemade strawberry shortcake is its simplicity. With just a few basic ingredients, you can create an impressive and delicious dessert. Making the shortcakes and whipping the cream from scratch doesn’t take much time, and the results are well worth the effort. Plus, preparing them in jars makes them a great grab-and-go dessert, picnic dessert, or even barbeque dessert.

A Homestead Favorite and A Must-Have for Summer!

As a large family mama, I know the importance of accessible, crowd-pleasing desserts. Strawberry shortcake in jars has become a favorite on our homestead. It’s a fun, portable way to enjoy this classic dessert, and the kids love having their servings. It’s also a great way to make the most of our garden’s strawberry harvest.

Making strawberry shortcakes from scratch is a great way to enjoy the summer season and enjoy the fruits of your labor. The combination of fresh ingredients and homemade goodness creates a dessert that’s far superior to anything store-bought. This versatile recipe can be enjoyed at family dinners, picnics, or as a special treat on a busy night.

Next time you have a bounty of fresh strawberries, try making homemade strawberry shortcake. With its crumbly shortcake, luscious whipped cream, and juicy strawberries, it’s sure to become a favorite in your household, just as it has in ours.

Ingredients

Strawberry Filling

  • 4 cups fresh strawberries sliced
  • ¼ cup granulated sugar

Sweet Biscuits

  • 2 cups all purpose flour
  • ⅓ cup gradulated sugar
  • 1 tablespoon aluminum free baking powder
  • ½ teaspoon salt
  • ½ cup cold unsalted butter cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • additional sugar for sprinkling
  • whipped cream (optional for serving)

Instructions

For the Strawberry Mixture:

  • In a mixing bowl, combine the sliced strawberries with ¼ cup of sugar. Stir well, cover, and set aside to let the strawberries macerate.

For the Sweet Biscuits:

  • Preheat your oven to 425°F (220°C)
  • In another large mixing bowl, whisk together the flour, ¼ cup sugar, baking powder, and salt.
  • Add the cubed cold butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
  • Pour in heavy cream and vanilla in to the flour mixture. Stir gently until just combined and the dough comes together. Do not overmix.
  • Turn the dough onto a floured surface and knead it gently a few times until it holds it shape in a dough ball. Pat or roll the dough into a rectangle about 1 inch thick.
  • Use a biscuit cutter, cut out biscuit rounds or cut the dough into squares with knife from the dough. Place the rounds on a baking sheet lined with parchment paper. Sprinkle the tops of the biscuits with a little sugar for added sweetness.
  • Bake the biscuits in the preheated oven for 12-15 mins or until golden brown. Remove the biscuits from the oven and let them cool on a wire rack.

To Assemble 8 Classic Shortcakes:

  • To assemble the strawberry shortcakes, split the biscuits in half horizontally. Place a spoonful of macerated strawberries at the bottom of each half of biscuit. Top with a dollop of whipped cream, if desired.
  • Place the other half of the biscuit on top of the strawberries and cream. Serve the strawberry shortcakes immeditely and enjoy!

To Assemble 6 Strawberry Shortcake in Jars:

  • To assemble the strawberry shortcakes jars, crumble the shortcakes to ¼-½ inch pieces depending on your jar size. Place a spoonful of whipped cream at the bottom of each jar, followed by a layer of crumbled shortcake, then a layer of macerated strawberries. Continue this pattern until each har is filled to the top. Top with a dollop of whipped cream and a sliced strawberry, if desired. Serve the strawberry shortcakes immediately, and enjoy!
