Flatbreads are my go-to for hot summer days! The kids can be hot from the summer heat, and I could want something easy. They're easy to make, can be dressed with your favorite toppings, and can be cooked on the grill or smoker. They're incredibly versatile—you can make them fresh or prepare them beforehand, then top and bake them when ready.

What Is Flatbread?

Flatbread is typically unleavened or only lightly leavened, resulting in a thinner, more pliable texture than traditional loaves of bread. It has been a staple in many cultures for centuries, with worldwide variations, from Indian naan to Middle Eastern pita to Italian focaccia. Flatbreads are incredibly versatile. They can be used as a base for pizzas and wraps or enjoyed independently with olive oil and herbs.

The Taste of Homemade Flatbread

The versatility of homemade flatbread lies in its simplicity. The taste perfectly balances a slightly crispy exterior with a soft, chewy interior. The flavor is mild, complementing a wide range of toppings and dips. When cooked on the grill or smoker, flatbreads acquire a deliciously smoky aroma that enhances their overall taste.   • Rolling Out the Dough:   Once the dough has rested for about 30 minutes to 1 hour, depending on the thickness of your desired flatbread, divide it into smaller portions (about eight pieces for this recipe). Roll each piece into a ball, then use a rolling pin to flatten them into thin circles, ovals, or rectangles about ¼-1/2 inch thick. The thinner the dough, the crispier the flatbread will be.
  • Baking the Flatbread: You have several options for cooking flatbread. My favorite method during the summer is grilling, which adds a beautiful smoky flavor. Preheat your grill to medium-high heat. Brush each flatbread lightly with olive oil and place them on the grill grates. Cook for 2-3 minutes on each side until nicely browned. Alternatively, on a baking stone or steel baking sheet, you can bake them in a preheated oven at 450°F (230°C) for about 5-7 minutes.
  • Versatility: Flatbreads are a canvas for your culinary creativity. They can be served immediately or topped with your favorite ingredients, such as hummus, roasted vegetables, or fresh herbs. They also serve as a fantastic foundation for grilled pizzas. If you prefer, prepare a batch in advance, store them in an airtight container, and reheat them as needed.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • ¾ cup warm water
  • 2 tablespoons olive oil plus extra for cooking

Instructions
 

  • 1. Combine the flour, salt, and baking powder in a large bowl.
  • 2. Add the warm water and olive oil to the dry ingredients. Stir until a dough forms.
  • 3. Turn the dough out onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
  • 4. Place the dough in a bowl, cover it with a clean towel or plastic wrap, and let it rest for 30 minutes.
  • 5. After resting, divide the dough into 6-8 equal pieces. Roll each piece into a ball. Roll each ball into a flat circle, about ¼-inch thick, on a lightly floured surface.
  • 6. Heat a large skillet or griddle over medium-high heat and brush it lightly with olive oil. Cook each flatbread for about 2-3 minutes until golden brown and puffed up. Adjust the heat as needed to prevent burning.
  • 7. Serve the flatbreads warm. You can enjoy the flatbreads independently or use them as a base for various toppings and dips.
