1/2 cup granulated sugar
1/4 cup unsweetened cocoa powder
1/4 cup cornstarch
Pinch of salt
2 3/4 cups whole milk
1/2 cup heavy cream
4 ounces semisweet chocolate, chopped
1 teaspoon vanilla extract
Instructions
- Whisk together sugar, cocoa powder, cornstarch, and salt in a medium saucepan.
- Gradually whisk in milk and heavy cream until smooth.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil, about 8-10 minutes.
- Remove from heat and stir in chopped chocolate and vanilla extract until the chocolate is melted and the mixture is smooth.
- Transfer pudding to serving dishes or a large bowl.
- Cover with plastic wrap, pressing the wrap directly onto the surface of the pudding to prevent skin from forming.
- Chill in the refrigerator for at least 2 hours before serving.
- Serve chilled, optionally topped with whipped cream or chocolate shavings.
Notes
For a richer chocolate pudding use 70% dark chocolate.
