Description
Easy & healthy homemade Cucumber and Feta Cheese Salad. Use fresh garden cucumbers, tangy feta, avocado oil, and red wine vinegar.
Ingredients
2 large cucumbers, peeled and sliced
1/2 cup feta cheese, crumbled
1/4 cup red onion, thinly sliced
2 tablespoons dried or fresh dill, chopped
1/4 cup avocado oil
1-2 tablespoons lemon juice
1 tablespoon red wine vinegar
Salt and pepper to taste
Instructions
1. Combine the cucumber slices or quarters, crumbled feta cheese, red onion, and chopped dill in a large bowl.
2. Whisk the avocado oil, lemon juice, red wine vinegar, salt, and pepper in a small bowl.
3. Pour the dressing over the cucumber mixture and toss to coat evenly.
4. Chill in the refrigerator for at least 20 minutes before serving to allow the flavors to blend.
Notes
You can add one can (15oz) of chick peas to add protein to the salad.
